Duck Eggs!


When I brought home the ducklings I never thought about eating their eggs. They have very large yolks and taste similar to chicken eggs. The bacon was also raised on the farm. I try not to think about it coming from Winken, Blinkin and Nod. I like to think they are living somewhere else, happily romping through the fields the way they did here.

Duck eggs are wonderful for baking especially merangue :) They froth up lighter than chicken eggs!
We enjoyed ham from Maggie's farm last night -yummy!!!!
